I do my best to ensure nothing goes to waste in our house and any bits and bobs like these mushrooms (that had definitely seen better days😬) still provided me with a rather tasty lunch when scattered over some wilted spinach on #gf toast and sprinkled with a little chilli. I find as it’s just me at home most lunch times, it’s the perfect opportunity to simply eat or conjure up delicious things with stuff that needs using up. And whatever I pop together I’m never ready to polish off my last fork or spoonful!

Posted a fresh video over on YouTube. This time I’m sharing how quick and easy it is to make my grandma’s ginger biscuits. I did actually make another batch a few days later (the ones in the picture) as I had a bit of a wobble as to what was the best temp to bake these yummy biscuits on. Anyway after a further test batch on Sunday, baking the biscuits on 3 different temps and for varying times, I concluded that the cooking temperature my cousin had jotted down was the one I should stick with, but added additional notes at the bottom of the recipe should you fancy a crunchier biscuit. Testing the biscuits out again was a great excuse to fill the biscuit tin up again, but as Neil ate 3 yesterday and we passed a couple on to Neil’s mum too, I think I may be having to make more very soon. Posted the recipe for this delicious #glutenfree raspberry, lemon and yogurt tea loaf recipe on my blog yesterday. Feel a bit bad, as the original recipe I used to make this was something I’d cut out from a Saturday Telegraph mag, but didn’t make a note of who’s contributed the recipe so unfortunately I can’t credit them. Anyway, whoever you are, thanks for sharing such a super duper recipe, which works splendidly as a gluten free version too. This cake, with its soft lemon flavoured sponge, dotted here and there with fresh raspberries and topped with a sweet crunchy lemon drizzle topping, was a huge hit in our house and I hope it will be in yours too. I’m over the moon with how my #glutenfree version of @nigellalawson steamed syrup sponge turned out. It honestly smashed all expectations. As you know I’m s huge fan of adapting standard cake and pudding recipes into gluten free format and time and time again it works splendidly. Popped together this #glutenfree macaroni cheese t

Popped together this #glutenfree macaroni cheese the other night for our tea. Whilst I find it very satisfying to make a roux, for quickness I simply heated the milk and thickened with a spoonful of cornflour blended in a little cold milk (just how my mum used to make a cheese sauce). Also, I realised I was leaving us a bit short of milk for our morning cuppa, but a spot of fresh cream I had leftover in the fridge meant I could hold back on the milk a little and put the cream to good use too.🥳 I added plenty of grated mature @davidstowcheddar to the sauce along with a little butter and spoonful of #gf dijon mustard and seasoned with a touch of salt. After mixing the cheese sauce with the cooked @sainsburys gf macaroni (which is excellent👍) I tipped the lot into an oven proof dish, and topped with grated cheese, sliced tomatoes and plenty of cracked pepper, then baked for about 25 minutes in a hot oven until bubbling and delicious. For a crispy topping alternative you could mix grated cheese with gf breadcrumbs before scattering over the top.

Will be whipping up a batch of these #glutenfree butterfly cakes for me and my friends to enjoy this week. They’re a firm favourite with us all and I love making them too.👩‍🍳 Despite all my bakes being gluten free my friends frequently request me to fetch cakes with me when I call round, which I think is rather super as it proves just how good #glutenfreegoodies can be.😍🥳

The original recipe I adapted to make a gluten free version of these yummy soft pancakes came from a site called Baking with Granny. At Christmas I decided that to save money I needed

At Christmas I decided that to save money I needed to plan out what we were going to eat for our main meals each week. So far, other than having to juggle things around due to best before dates or being short of time it’s all going great. I also think it’s made me more mindful of what we are eating too. We have fish at least once a week and a couple of days we try to skip meat. Already having medical dietary needs I’m keen not to miss any other food groups except for gluten from my diet but instead to revel in the diversity and delicious things I can still enjoy. Thanks to people like the @theguthealthdoctor I’m also loving learning about the benefits of adding more plant based goodies to my diet.
I’ve also gone a bit bonkers for sauerkraut, which you will spot as a side on a couple of the meal shots I’ve included. The #glutenfree black pudding is from @voakesfreefrom and is delicious (gluten free black pud is a rarity!). I wrote a blog post just after Christmas setting out a few plans for this year and included in it my plan to budget better. Hello hope the weekend has been kind to you. No new recipe from me this week, as the one I’d trialled was good but I feel it could be even better, so plan to play around with it a little. But as we ‘needed’ cake in our house, I rustled up this #glutenfree ginger spiced cake. The recipe for this cake is over on my blog. It’s super easy to make and requires no fancy ingredients or equipment so whilst it’s a bit late in the day, you’ve still time to get a bake on!😉 I was out of crystallised ginger so had to skip that. I was also low on light muscovado sugar so used half dark and light instead - this resulted in a darker richer crumb which I rather liked. 😍 This cake fills the kitchen with the most glorious buttery warming spice smell as it bakes. Just been scrolling through my pictures deciding what recipe to give a little mention and stumbled across this #glutenfree ganache topped chocolate cake. The original recipe I used to make this delicious cake came from @nigellalawson ‘How to Eat’ and it’s an absolute cracker. This cake would make a perfect birthday or weekend treat cake! And should you have any leftovers, it also freezes really well. This delicious tomato and sweetcorn soup ‘recipe

This delicious tomato and sweetcorn soup ‘recipe’ was first introduced to me by one of my friends during a cookery class at school. We’d been given a free rein of what we’d like to make and my friend decided on this and brought in the bits and bobs needed to make it. Despite loving it at the time, it’s taken me many years to recreate it. To make this tasty soup you just need to pour a can of @heinz_uk tomato soup (currently #gf) and a can of chopped tomatoes into a pan. Either add to the pan a can of sweetcorn or a handful of corn that has been boiled first and drained. Heat thoroughly before serving up. To give my soup a little welcome heat, I added a dash of @linghamsuk chilli sauce. I sprinkled over a few dried mixed herbs as that’s all I had in, but ideally fresh chives, coriander or parsley would be a nice addition and jazz things up a little should you fancy serving this up for a lunch gathering. The amount I made was plenty for 2.
