This vibrantly coloured red slaw has it all going on, with a lovely variation of textures and flavours. The ideal side to enjoy with barbecued meat/fish/veggies, homemade quiche, cold cuts (and hot buttered new potatoes – yum!), freshly cut sandwiches, tasty toasties and so much more.
I’ve gone all out red for this slaw, but there aren’t any ‘rules and regs’ with the recipes I share. You can chuck in what the heck you like. I’m purely here to light a spark of culinary inspiration, for you to go on and make your own roaring fire.
¼ red cabbage, very finely sliced and rinsed
50g (2oz) *dried cranberries (I used Ocean Spray Craisins which are lovely)
2 cooked average size beetroots, diced (loving these beets at the moment)
½ red onion, finely diced
1-2 tablespoons good *mayonnaise (I’m a Hellman’s fan)
Cracked *pepper to taste
Put the cabbage, cranberries, beetroot and red onion into a large mixing bowl and give it all a quick stir to evenly distribute things.
Add just enough mayonnaise to lightly coat and bring everything together. Season with cracked pepper.
Transfer into a serving dish. And if not tucking into straight away, cover and store in the fridge.
Recipe notes and suggestions:
This slaw is at its very best on the day it is made. But will keep fine when covered and kept in the fridge for up to 2 days. Should you want to prep a day in advance, simply hold of adding the mayonnaise.
I did think about adding other ingredients to the slaw but decided to keep the basic recipe super simple. But should you fancy a variation, here are a few suggestions of other tasty bit’s and bobs that I think would work well: Pomegranates, grated orange, freshly chopped mint and toasted flaked almonds. I’m sure you will have your own ideas too.
