Proudly introducing my ‘magic mallow crispy cakes’…. a truly magnificent indulgent gluten free treat for kids of all ages! The idea for these rather jolly – if not crazy – looking chocolate crispy cakes came from something my mum would make for our birthday parties and family celebrations when we were younger.
I’m thinking you may not even need a recipe for these yummy crispy cakes with their magical twist, but just in case, thought I’d better get one written up. And anyway, as with many of my recipes it’s a lovely bit of self-indulgence to have a little wander down memory lane…. a fabulous place for me and one that inspires me to share delightful things with you.

Ingredients (Will fill 18 fairy cake cases or 12 muffin cases)
100g gluten free crispy rice pops
240g bag *Cadburys giant chocolate buttons
Pack of ‘huge’ *marshmallows (picked up the ones I used from ASDA)
To top the mallows you will need
119g bag *Cadburys giant chocolate buttons
*Sprinkles (picked mine up from Sainsburys and they are gluten free. All sprinkles need checking to ensure suitable)
Arrange the paper cases ready to be filled.
Melt 240g Cadburys buttons in a heatproof dish above a pan of simmering water. Once melted, carefully remove the bowl from the pan. Add the crispy rice pops to the melted chocolate and mix well.
With 2 dessert spoons divide the mixture between the paper cases.
With sharp kitchen scissors cut the marshmallows you need in half.
Place a halved marshmallow on top of each crispy cake. Cut side down.
Melt the remaining 119g Cadburys buttons as you did before, in a bowl over a pan of simmering water. Once melted remove the bowl from the heat.
Grab 2 teaspoons and pop about ¾ teaspoon of the melted chocolate onto each marshmallow and smooth out with the back of the spoon.
Shower the melted chocolate with gluten free sprinkles or whatever takes you your fancy!
That’s it, they’re all done. Should be set and ready for you to enjoy in about an hour!
