Last year when I was in the process of piecing together ideas for my website, I would stay up late at night and check out other people’s blogs. I wasn’t just looking for things I liked, but also, things I didn’t, as this helped me build up a profile of how I wanted my website to look – and then the wonderful PPM worked their magic and made my website real!. Thanks to all my ‘browsing’ I got to discover some truly amazing blogs that I now absolutely love to read. And at the drop of a hat, will grab my iPad, make a coffee, plonk myself down, and be inspired by other people’s words and pictures on the screen!
Popped together this lovely gluten free banana loaf the other day, as I had a couple of bananas that didn’t look great and it was the perfect way of using them up. I followed the BBC good food ‘Brilliant Banana loaf’ recipe, just switching a few ingredients to make it completely gluten free. Love the BBC Good food site for excellent and reliable recipes. They do have a dedicated gluten free section (as with my site, always double check the ingredients you use to make sure gf). But, also many of their standard recipes can also be adapted to make them gluten free – just as I have done for this banana loaf!!
There is no doubt about it, many gluten free products cost a lot more than their ‘gluten filled’ equivalents. But as a coeliac, despite any additional expense your gluten free diet must be maintained at all times to keep you on the right track, and when you are on a limited budget it can be difficult to accommodate this added expenditure your diet requires.
I have a really, simple, naturally gluten free, beef and tomato casserole recipe that I must share with you. Its’ the perfect thing to pop in the oven on a rainy day and tuck into a few hours later. Yet another favourite meal of mine as I was growing up, and one my Mum very often put together. Hope you love it as much as I do!
